  • 1 cup Fresh or frozen ube (purple yam), cooked and mashed
  • 2 cups Low-fat milk
  • 1 cup Low-fat coconut milk
  • 1 teaspoon Natural ube extract
  • 0.5 cup Granulated sugar
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Prepare the ube by cooking and mashing fresh or frozen purple yams until smooth. Measure out 1 cup of mashed ube and set aside.

In a medium saucepan, combine the low-fat milk, low-fat coconut milk, and granulated sugar. Heat the mixture over medium heat, stirring continuously, until the sugar fully dissolves. Do not let it boil.

In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Gradually pour the slurry into the milk mixture while stirring to avoid lumps.
