  • 0.25 cup honey
  • 0.25 cup unsweetened applesauce
  • 0.25 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg white
  • 3 drops optional purple food coloring

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

In another large mixing bowl, combine the unsweetened ube halaya, honey, unsweetened applesauce, granulated sugar, and vanilla extract. Mix well until smooth.

Add the egg white to the wet ingredients and whisk until fully incorporated. If using, add a few drops of purple food coloring for a more vibrant hue.

Gradually add the flour mixture to the wet mixture, stirring with a spatula until just combined. Be careful not to overmix.
