Ingredients

  • 500 g extra-lean ground turkey
  • 1 tsp olive oil
  • 1 onion, finely chopped
  • 2 carrot, finely diced
  • 2 celery stalks, finely diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 250 ml low-sodium chicken or turkey stock
  • 1 tbsp Worcestershire sauce
  • 100 g frozen peas
  • 700 g potatoes, peeled and chopped
  • 125 ml skim milk
  • 50 g light cream cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, celery, and garlic. Cook for 5-6 minutes, stirring occasionally, until vegetables are softened.

Step 3

Add the ground turkey to the skillet and cook until browned, breaking it up with a wooden spoon. This should take about 7-8 minutes.

Step 4

Stir in the tomato paste, chicken or turkey stock, and Worcestershire sauce. Bring to a simmer and let cook for 10 minutes, stirring occasionally, until the mixture thickens slightly. Stir in the peas and remove from heat.

Step 5

Meanwhile, boil the potatoes in a large pot of salted water for 10-12 minutes, or until tender. Drain and return the potatoes to the pot.

Step 6

Mash the potatoes with skim milk and light cream cheese until smooth. Season with salt and black pepper to taste.

Step 7

Spread the turkey mixture evenly into the base of an ovenproof dish. Spoon the mashed potatoes on top and spread them out to cover the turkey layer completely. Use a fork to create ridges on the surface of the potatoes for added texture.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the top is golden and the filling is bubbling around the edges.

Step 9

Remove from the oven and let cool for 5 minutes before serving. Enjoy your Low Fat Turkey Cottage Pie!
