  • 250 grams Whole wheat pasta
  • 1 teaspoons Olive oil
  • 2 cloves Garlic, minced
  • 100 grams Low-fat plain Greek yogurt
  • 120 milliliters Unsweetened almond milk
  • 1 teaspoons Truffle oil
  • 20 grams Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta and set it aside.

Step 2

In a large nonstick skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 3

Reduce the heat to low and stir in the low-fat Greek yogurt and unsweetened almond milk. Whisk until smooth and creamy.
