Prep Time:30 mins

Total Time:45 mins

Ingredients

  • 500 grams Chicken breast (boneless, skinless)
  • 2 medium Onion
  • 120 ml Low-fat plain yogurt
  • 2 tablespoons Lemon juice
  • 3 Garlic cloves
  • 1 teaspoon Paprika
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 300 grams Vegetables for skewers (such as bell peppers and zucchini)
  • 1 teaspoon Cooking spray or a small amount of oil

Directions

Step 1

Cut the chicken breast into bite-sized cubes (approximately 2.5 cm or 1 inch).

Step 2

Peel the onions, slice one onion thinly, and grate the other onion into a paste.

Step 3

In a large mixing bowl, combine the grated onion, low-fat plain yogurt, lemon juice, minced garlic, paprika, ground coriander, ground cumin, salt, and black pepper.

Step 4

Add the chicken cubes to the marinade and mix thoroughly to coat the meat. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight for maximum flavor.

Step 5

Wash and cut the vegetables into bite-sized pieces (similar in size to the chicken cubes) to ensure even cooking.

Step 6

Thread the marinated chicken and vegetable pieces alternately onto metal or wooden skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning).

Step 7

Preheat a grill, grill pan, or broiler on medium-high heat. Lightly grease the grill grates or pan with cooking spray or a small amount of oil.

Step 8

Cook the skewers for 5–7 minutes on each side, turning occasionally, until the chicken is fully cooked through and slightly charred outside. Use a meat thermometer to ensure the chicken reaches an internal temperature of 75°C (165°F).

Step 9

Transfer the skewers to a serving platter and sprinkle chopped fresh parsley over the top for garnish.

Step 10

Serve the shashlik hot, along with grilled vegetables, a side of rice, or a light green salad.
