Ingredients

  • 6 ounces Vermicelli (fideo) noodles
  • 6 cups Low-sodium vegetable broth
  • 3 medium Tomatoes
  • 0.5 White onion
  • 2 Garlic cloves
  • 1 teaspoons Olive oil
  • 0.5 teaspoons Cumin
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro
  • 4 Lime wedges

Directions

Step 1

Rinse and core the tomatoes. Cut them into quarters and set aside.

Step 2

Peel the onion and cut it into chunks. Peel the garlic cloves as well.

Step 3

In a blender, combine the tomatoes, onion, garlic, cumin, and 1 cup of vegetable broth. Blend until smooth and set aside.

Heat the olive oil in a large pot over medium heat. Add the vermicelli noodles and toast them, stirring constantly, until they turn golden brown (about 3-4 minutes).
