Ingredients

  • 2 cups Whole wheat flour
  • 2 tablespoons Semolina (optional, for extra crunch)
  • 1 teaspoon Salt
  • 0.5 teaspoon Carom seeds (ajwain)
  • 0.25 cup Low-fat yogurt
  • 0.75 cup Water
  • 1 cup Sattu (roasted gram flour)
  • 1 teaspoon Mustard oil
  • 1 tablespoon Pickle masala or mix pickle (optional, finely mashed)
  • 1 teaspoon Ginger (grated)
  • 1 teaspoons Green chili (finely chopped)
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Cumin seeds
  • 2 tablespoons Coriander leaves (finely chopped)
  • 1 teaspoon Ghee (for brushing)

Directions

Step 1

In a large mixing bowl, combine whole wheat flour, semolina (if using), salt, and carom seeds.

Step 2

Add low-fat yogurt and gradually mix in water to knead the mixture into a soft dough. Cover the dough with a damp cloth and set it aside for 15 minutes.

Step 3

To prepare the stuffing, mix sattu, mustard oil, pickle masala (if using), grated ginger, chopped green chili, lemon juice, cumin seeds, and coriander leaves in a bowl. Add a small amount of water, little by little, to make the stuffing mixture moist but not too wet. It should remain crumbly.

Step 4

Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper.

Step 5

Divide the dough into equal portions (about 8-10 balls). Roll each portion into a small circle about 3 inches in diameter.

Step 6

Place a spoonful of the stuffing in the center of each circle. Carefully bring the edges together to seal it, forming a ball. Gently flatten the top, ensuring the stuffing is enclosed.

Step 7

Place the prepared littis on the baking tray. Brush them lightly with ghee for flavor and to ensure a golden-brown crust.

Step 8

Bake in the oven for 20-25 minutes, flipping them halfway through to allow even browning on all sides.

Step 9

Once the littis are golden brown, remove them from the oven and let them cool slightly.

Step 10

Serve warm with low-fat yogurt, dal, or mashed roasted eggplant (baingan bharta) for a complete meal.
