Ingredients

  • 240 ml warm skim milk
  • 7 g dry active yeast
  • 50 g granulated sugar
  • 400 g all-purpose flour
  • 1 tsp salt
  • 60 ml unsweetened applesauce
  • 1 egg (large, lightly beaten)
  • 150 g light cream cheese
  • 1 tsp vanilla extract
  • 120 ml fruit preserves (any flavor, low sugar)
  • 15 g powdered sugar (optional, for garnish)

Directions

Step 1

In a small bowl, mix warm skim milk (about 110°F/43°C) with the dry active yeast and 1 tsp of the sugar. Let sit for 5 minutes until frothy.

Step 2

In a large mixing bowl, combine the all-purpose flour, salt, and the rest of the granulated sugar.

Step 3

Add the applesauce, beaten egg, and frothy yeast mixture to the dry ingredients. Mix well until a dough forms.

Step 4

Knead the dough on a lightly floured surface for 8-10 minutes or until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.

Step 5

Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.

Step 6

While the dough rises, prepare the cheese filling by combining the light cream cheese, vanilla extract, and 1 tbsp of powdered sugar (optional) in a small bowl. Mix until smooth.

Step 7

Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a ball and place on a parchment-lined baking sheet, leaving space between each ball.

Step 8

Flatten the center of each dough ball slightly using the back of a spoon or your fingers to create an indentation.

Step 9

Fill each indentation with about 1 teaspoon of the cheese mixture and 1 teaspoon of fruit preserves.

Step 10

Cover the kolache loosely with plastic wrap or a damp kitchen towel and let rise for another 30 minutes.

Step 11

Preheat the oven to 350°F (175°C).

Step 12

Bake the kolache for 18-20 minutes, or until lightly golden on top.

Step 13

Allow to cool slightly before serving. Dust with powdered sugar if desired.
