Ingredients

  • 3 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 cup Low-fat milk
  • 2 tablespoons Olive oil
  • 1 large Egg
  • 8 ounces Lean ground beef (90% lean or higher)
  • 2 cups Green cabbage
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Low-sodium soy sauce
  • 1 as needed Nonstick cooking spray

Directions

Step 1

In a small bowl, combine the yeast, sugar, and 1/4 cup of warm milk. Let it sit for 5 minutes until frothy.

Step 2

In a large bowl, mix the flour and salt. Add the yeast mixture, the remaining milk, 1 tablespoon of olive oil, and the egg. Mix until a dough forms.

Step 3

Knead the dough on a floured surface for about 8 minutes until smooth and elastic. Place the dough in an oiled bowl, cover with a clean towel, and let rise for 1 hour or until doubled in size.

Step 4

While the dough is rising, prepare the filling. Heat the remaining 1 tablespoon of olive oil in a nonstick skillet over medium heat.

Step 5

Add the ground beef and cook for about 5 minutes, breaking it up into small pieces. Drain any excess fat if necessary.

Step 6

Stir in the onion, garlic, and cabbage. Cook for another 5-7 minutes until the vegetables are softened.

Step 7

Add the paprika, black pepper, and soy sauce. Stir to combine and cook for 2 more minutes. Remove from heat and let cool.

Step 8

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly spray with nonstick cooking spray.

Step 9

Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a ball, then flatten into a 5-inch circle.

Step 10

Place about 2 tablespoons of filling in the center of each circle. Fold the dough over the filling, pinching the edges to seal tightly.

Step 11

Place the piroshki seam side down on the prepared baking sheet. Cover with a towel and let rise for 15 minutes.

Step 12

Bake in the preheated oven for 20-25 minutes, or until golden brown. Let cool slightly before serving.
