Ingredients

  • 12 oz Low-fat chicken sausage
  • 1 tbsp Olive oil

  • 2 medium Celery stalks, diced
  • 14.5 oz Canned diced tomatoes (no salt added)
  • 6 cups Low-sodium chicken broth
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 4 cups Fresh spinach, chopped
  • 9 oz Fresh tortellini (cheese-filled, low-fat if available)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Remove the casings from the chicken sausage, if necessary, and crumble the sausage into the pot. Cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the sausage from the pot and set aside.
