Ingredients

  • 6 medium Tomatoes, fresh and diced
  • 4 cups Low sodium vegetable broth
  • 2 tablespoons Tomato paste
  • 10 Fresh basil leaves, roughly chopped
  • 1 teaspoons Dried oregano
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 cups Unsweetened almond milk (or other low-fat milk alternative)
  • 1 tablespoons Optional: fresh basil for garnish

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Step 2

Add the diced onion and sauté for 5-6 minutes until soft and translucent.

Step 3

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Add the diced tomatoes, vegetable broth, and tomato paste. Stir well to combine.
