  • 3 slices Galangal (sliced)
  • 3 Fresh Thai chilies
  • 200 grams Cherry tomatoes
  • 150 grams Mushrooms (white button or straw mushrooms)
  • 3 tablespoons Fish sauce (low sodium)
  • 4 tablespoons Fresh lime juice
  • 1 teaspoon Brown sugar
  • 2 tablespoons Fresh cilantro
  • 2 Scallions (sliced)
  • 1 tablespoon Soy sauce (low sodium)

Directions

Step 1

Prepare the fresh ingredients by thinly slicing the chicken breast, bruising the lemongrass stalks (lightly smashing them to release flavor), and slicing the galangal.

Step 2

Bring the low sodium chicken stock to a boil in a medium pot over medium heat.

Step 3
