Ingredients

  • 500 grams Lean ground turkey
  • 60 ml Pineapple juice (unsweetened)
  • 2 tablespoons Coconut sugar
  • 2 tablespoons Low-sodium soy sauce
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 cups Cooked brown rice
  • 4 cloves Garlic cloves, minced
  • 1 teaspoon Olive oil
  • 2 large Eggs
  • 1 spritz Cooking spray
  • 1 tablespoon Fresh parsley or green onions for garnish (optional)

Directions

Step 1

In a bowl, combine the ground turkey, pineapple juice, coconut sugar, low-sodium soy sauce, garlic powder, paprika, salt, and ground black pepper. Mix until well combined.

Step 2

Cover the bowl with plastic wrap and marinate the turkey mixture in the refrigerator for at least 1 hour, or overnight for best results.

Step 3

Heat a large non-stick pan over medium heat and lightly spray it with cooking spray. Add the marinated turkey and cook, stirring frequently, until the meat is fully cooked and slightly caramelized, about 8-10 minutes. Set aside.

Step 4

In the same pan, heat 1 teaspoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
