Ingredients

  • 300 g All-purpose flour
  • 100 g Whole wheat flour
  • 7 g Active dry yeast
  • 250 ml Warm water
  • 1 tsp Salt
  • 1 tbsp Olive oil
  • 50 g Brown rice flour
  • 1.5 tsp Sugar
  • 3 g Instant yeast (for topping)
  • 50 ml Water (for topping)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, salt, and active dry yeast.

Step 2

Gradually add the warm water while stirring the mixture until a shaggy dough forms.

Step 3

Add the olive oil and knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise for 60 minutes or until doubled in size.

Step 5

Punch down the risen dough and divide it into 6 equal portions. Shape each portion into a roll and place them on a baking sheet lined with parchment paper.

Cover the shaped rolls with a damp cloth and let them rise again for 30-45 minutes until puffed up.

Preheat your oven to 200°C (390°F).
