Ingredients

  • 200 grams Vegetarian beef strips (soy-based or seitan)
  • 4 pieces Whole wheat tortillas
  • 4 tablespoons Low-sodium teriyaki sauce
  • 1 teaspoon Sesame oil
  • 2 cloves Garlic (minced)
  • 1 cup Carrots (shredded)
  • 1 cup Cucumber (julienned)
  • 1 medium Red bell pepper (thinly sliced)
  • 2 cups Baby spinach leaves
  • 2 stalks Green onions (sliced)
  • 4 tablespoons Low-fat Greek yogurt
  • 1 teaspoon Sriracha or hot sauce (optional)

Directions

Step 1

Heat the sesame oil in a non-stick skillet over medium heat.

Step 2

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

Step 3

Add the vegetarian beef strips to the skillet and cook for 3-4 minutes, stirring occasionally until heated through and slightly browned.

Pour the low-sodium teriyaki sauce over the vegetarian beef strips and stir to fully coat. Let it simmer for 1-2 minutes, then remove from heat.
