Servings: 2

Ingredients

  • 2 large Eggs
  • 3 sprays Cooking spray
  • 1 tablespoon Low sodium soy sauce
  • 1 small Shallot
  • 1 clove Garlic
  • 1 small Red chili (optional)
  • 1 half Lime
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 tablespoon Scallions (for garnish)

Directions

Step 1

Peel and thinly slice the shallot and garlic. If using chili, thinly slice it as well and set aside.

Step 2

Beat the eggs in a bowl with a pinch of salt and black pepper until well combined.

Step 3

Heat a non-stick frying pan over medium heat and apply 3 sprays of cooking spray to evenly coat the surface.

Step 4

Add the sliced shallot, garlic, and chili (if using) to the pan. Stir-fry for 1-2 minutes until fragrant and lightly golden.

Step 5

Pour the beaten eggs into the pan. Let the eggs cook undisturbed for 1-2 minutes, then gently stir to create soft folds. Cook until the eggs are just set (avoid overcooking to keep them soft).

Step 6

Add the low sodium soy sauce to the pan, letting it seep into the eggs to enhance the flavor. Stir gently to distribute the sauce evenly.

Step 7

Transfer the eggs to a serving plate. Squeeze fresh lime juice over the eggs for a tangy kick.

Step 8

Top with chopped scallions for a burst of freshness and serve immediately with steamed rice or as a side dish.
