Ingredients

  • 3 tablespoons Taro powder (low-fat or reduced calorie)
  • 1 cup Low-fat milk
  • 1.5 cups Water
  • 0.333 cup Quick-cooking tapioca pearls
  • 1.5 tablespoons Low-calorie sweetener (stevia, monk fruit, etc.)
  • 1 cup Ice cubes

Directions

Step 1

Bring 1.5 cups of water to a boil in a small saucepan.

Step 2

Once boiling, add the tapioca pearls and stir immediately to prevent sticking. Reduce heat to medium and cook for 3-5 minutes or according to the package instructions.

Step 3

Once the tapioca pearls float to the top and reach your desired chewiness, drain them and rinse with cold water to stop the cooking process. Set aside.

Step 4

In a microwave-safe mug or small saucepan, heat the low-fat milk until warm but not boiling (about 1-2 minutes in the microwave or gently heated on the stove).

Step 5

Whisk the taro powder and low-calorie sweetener into the warm milk until fully dissolved.

Step 6

In a blender, combine the taro milk mixture and ice cubes. Blend until smooth and frothy.

Step 7

Pour the cooked tapioca pearls into a serving glass.

Step 8

Pour the blended taro milk over the tapioca pearls.

Step 9

Add a wide straw and enjoy your low-fat taro boba!
