Ingredients

  • 120 grams Tapioca flour (also known as tapioca starch)
  • 2 large Egg white
  • 240 ml Low-fat milk
  • 1 pinch Salt (optional, for savory crepes)
  • 1 as needed Non-stick cooking spray

Directions

Step 1

In a medium mixing bowl, combine tapioca flour, egg whites, and low-fat milk. Whisk until the batter is smooth and lump-free. If making savory crepes, add a pinch of salt to the batter.

Step 2

Preheat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with non-stick cooking spray.

Pour approximately 60 ml (1/4 cup) of batter onto the skillet, tilting and rotating the pan immediately to spread the batter evenly into a thin layer.
