  • 1 lb Lean pork tenderloin
  • 1 cup Fresh pineapple, diced

  • 1 teaspoon Dried oregano
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 pieces Low-fat corn tortillas
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup White onion, finely diced
  • 1 teaspoon Cooking spray or 1 teaspoon olive oil

Directions

Step 1

Remove seeds from the dried guajillo and ancho chiles. Place them in a bowl and pour hot water over them to soften (about 10 minutes).

While the chiles soak, thinly slice the pork tenderloin into bite-sized strips.
