  • 1 cup frozen corn kernels
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons sliced green onions (optional, for garnish)
  • 0.25 cup reduced-fat shredded cheddar cheese (optional)

Directions

Step 1

Rinse the brown rice under cold water. Add the rice and water to a medium saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes or until the rice is tender and water is absorbed. Remove from heat and fluff with a fork.
