  • 1 lb lean ground turkey (93% lean or higher)
  • 1 medium yellow onion, diced
  • 2 tbsp low sodium taco seasoning
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned corn, drained
  • 1 cup canned diced tomatoes (no salt added)
  • 0.5 cup fat-free plain Greek yogurt
  • 1 cup reduced-fat shredded cheddar cheese
  • 6 corn tortillas, sliced into strips
  • 2 tbsp cilantro, chopped (optional for garnish)
  • 1 can nonstick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Spray a 9x13-inch casserole dish with nonstick cooking spray and set aside.

Step 3

In a large skillet over medium heat, cook the lean ground turkey until browned and fully cooked through, about 7-8 minutes. Drain any excess fat if necessary.

Add the diced onion to the skillet with the turkey, cooking for another 3-4 minutes or until the onion becomes translucent.

Stir in the low sodium taco seasoning, canned black beans, corn, and diced tomatoes. Mix well and simmer for 3-4 minutes to combine the flavors.
