Ingredients

  • 4 medium (about 2 lbs total) sweet potatoes
  • 0.5 cup unsweetened almond milk
  • 1 teaspoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground cinnamon (optional)
  • 0.25 teaspoon black pepper (optional)

Directions

Step 1

1. Wash and peel the sweet potatoes. Cut them into evenly-sized chunks (about 1-2 inches).

Step 2

2. Fill a large pot with water and bring it to a boil. Add a pinch of salt to the water.

Step 3

3. Add the sweet potato chunks to the boiling water. Reduce the heat to medium and simmer until the pieces are fork-tender, about 15-20 minutes.

Step 4

4. Drain the cooked sweet potatoes and transfer them to a large mixing bowl or food processor.

Step 5

5. Add the unsweetened almond milk, olive oil, and salt to the sweet potatoes. For additional flavor, you can also add ground cinnamon and black pepper at this stage.

Step 6

6. Using a potato masher, immersion blender, or food processor, puree the sweet potatoes until smooth and creamy. Adjust the consistency by adding more almond milk if needed.

Step 7

7. Taste and adjust seasoning, adding more salt, cinnamon, or pepper as desired.

Step 8

8. Serve warm as a side dish or store in an airtight container in the refrigerator for up to 4 days.
