Ingredients

  • 500 grams Lean ground pork (preferably 90-95% lean)
  • 2 large Egg whites
  • 60 grams Panko breadcrumbs (or whole wheat breadcrumbs for extra fiber)
  • 2 tablespoons Low-fat milk
  • 3 cloves Garlic, minced
  • 1 small Onion, finely grated
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Low-sodium soy sauce
  • 1 teaspoon Paprika
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 1 optional for cooking Olive oil spray

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper or lightly spray it with olive oil.

Step 2

In a large bowl, combine the lean ground pork, egg whites, panko breadcrumbs, and low-fat milk.

Step 3

Add the minced garlic, grated onion, chopped parsley, soy sauce, paprika, black pepper, and salt into the mixture. Mix well using clean hands or a fork until all ingredients are evenly incorporated.

Step 4

Scoop out about 1 1/2 tablespoons of the pork mixture and form it into a ball using your hands. Repeat with the remaining mixture to create approximately 18-20 meatballs.

Step 5

Place the meatballs evenly spaced on the prepared baking sheet.

Step 6

Bake the meatballs in the preheated oven for 18-20 minutes, or until they are fully cooked and reach an internal temperature of 71°C (160°F).

Step 7

For extra browning, you may turn on the oven broiler during the last 2-3 minutes of cooking, watching closely to prevent burning.

Step 8

Serve the meatballs immediately with your favorite low-fat dipping sauce or over a bed of zucchini noodles, brown rice, or a fresh salad for a healthy and satisfying meal.
