  • 1 cup Whole wheat breadcrumbs

  • 2 teaspoons Extra virgin olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Vegetable broth (low sodium)
  • 4 pieces Lemon wedges

Directions

Step 1

Rinse the artichokes under running water, then trim the tops of the leaves with kitchen shears to remove sharp tips. Cut off about 1 inch from the top of each artichoke and trim the stem to create a flat base.
