Ingredients

  • 8 ounces Whole wheat pasta (such as rotini or penne)
  • 2 cups Frozen corn kernels
  • 1 medium Red bell pepper
  • 4 stalks Scallions (green onions)
  • 0.25 cup Cilantro (fresh)
  • 0.5 cup Plain low-fat Greek yogurt
  • 0.25 cup Low-fat mayonnaise
  • 2 tablespoons Lime juice
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Garlic powder
  • 0.25 cup Cotija cheese (optional, crumbled)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

Step 2

In a skillet over medium-high heat, sauté the frozen corn kernels (no need to thaw) for 4-5 minutes until slightly charred. Remove from heat and set aside to cool.
