Ingredients

  • 300 grams Lean beef (sirloin or flank steak)
  • 2 whole Green bell peppers
  • 2 tablespoons Soy sauce (low sodium)
  • 1 teaspoon Cornstarch
  • 1 tablespoon Rice vinegar
  • 2 cloves Garlic
  • 1 teaspoon Fresh ginger
  • 1 teaspoon Sesame oil
  • 1 tablespoon Vegetable oil (for stir-frying)
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Water
  • 0.25 teaspoon Red chili flakes (optional)

Directions

Step 1

Thinly slice the lean beef against the grain into bite-sized strips.

Step 2

In a small bowl, whisk together the soy sauce, rice vinegar, cornstarch, sesame oil, and water to make the marinade.

Step 3

Place the beef strips in a medium bowl and pour half of the marinade over them. Mix well, cover, and let the beef marinate for 10 minutes while you prepare the other ingredients.

Step 4

Wash and core the green bell peppers, then slice them into thin strips.

Step 5

Mince the garlic and grate the ginger.

Step 6

Heat a large non-stick skillet or wok over medium-high heat. Add the vegetable oil and swirl to coat the pan.

Step 7

Once the oil is shimmering, add the marinated beef. Stir-fry for 2-3 minutes until the beef is browned but not fully cooked. Remove the beef from the skillet and set aside.

Step 8

In the same skillet, add the minced garlic and grated ginger. Stir-fry for 30 seconds until fragrant.

Step 9

Add the sliced green bell peppers to the skillet. Stir-fry for 2-3 minutes, allowing the peppers to remain slightly crisp.

Step 10

Return the beef to the skillet along with the remaining marinade. Add black pepper and, if desired, red chili flakes for a touch of heat.

Step 11

Toss everything together and cook for an additional 2-3 minutes until the beef is fully cooked and the sauce has thickened slightly.

Step 12

Remove from heat and serve immediately. Pair with steamed rice or a side of your choice for a complete meal.
