Ingredients

  • 200 grams Dried dates
  • 1 teaspoon Baking soda
  • 250 milliliters Boiling water
  • 1 large Egg
  • 75 grams Low-fat Greek yogurt
  • 75 grams Brown sugar
  • 1 teaspoon Vanilla extract
  • 150 grams Whole wheat flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Ground cinnamon
  • 50 milliliters Low-fat milk
  • 2 tablespoons Maple syrup

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a small baking dish or pudding tin with non-stick spray or a small amount of oil.

Step 2

Chop the dried dates into small pieces and place them in a heatproof bowl.

Step 3

Sprinkle the baking soda over the dates, then pour the boiling water on top. Let the mixture sit for 10 minutes to soften the dates.

Step 4

In a large mixing bowl, whisk together the egg, low-fat Greek yogurt, brown sugar, vanilla extract, and low-fat milk until smooth.

Step 5

Use a fork or blender to mash the soaked dates into a coarse paste. Add the date mixture to the wet ingredients and mix well.

Step 6

Sift in the whole wheat flour, baking powder, and ground cinnamon. Gently fold the dry ingredients into the wet mixture until fully incorporated. Do not overmix.

Step 7

Pour the batter into the prepared baking dish and spread it out evenly.

Step 8

Bake in the preheated oven for 30-35 minutes, or until a skewer inserted into the center comes out clean.

Step 9

While the pudding is baking, prepare the syrup by gently heating the maple syrup in a small saucepan over low heat or in the microwave.

Step 10

Once the pudding is done, remove it from the oven and allow it to cool slightly. Drizzle the warm maple syrup over the top before serving.

Step 11

Slice the pudding into portions and enjoy warm with an optional dollop of low-fat yogurt or a sprinkle of cinnamon.
