Ingredients

  • 300 grams All-purpose flour
  • 7 grams Instant yeast
  • 50 grams Sugar
  • 150 ml Low-fat milk
  • 50 ml Water
  • 10 ml Vegetable oil
  • 200 grams Lean pork loin
  • 30 grams Hoisin sauce
  • 15 ml Soy sauce (low-sodium)
  • 10 ml Oyster sauce
  • 10 grams Honey
  • 5 grams Cornstarch
  • 15 ml Water (for slurry)
  • 1 clove Garlic
  • 10 grams Green onions
  • 3 ml Sesame oil

Directions

Step 1

1. Prepare the dough: In a large mixing bowl, combine the all-purpose flour, instant yeast, and sugar. In a small saucepan, warm the low-fat milk and water until lukewarm (around 37°C or 98.6°F). Slowly add the milk mixture and the vegetable oil to the dry ingredients, stirring until a dough forms.

Step 2

2. Knead the dough: Transfer the dough to a floured surface and knead for about 8-10 minutes, or until it is smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.

Step 3

3. Prepare the filling: Finely dice the lean pork loin into small cubes. Mince the garlic and thinly slice the green onions. In a small bowl, mix the hoisin sauce, low-sodium soy sauce, oyster sauce, honey, and sesame oil.

Step 4

4. Cook the filling: Heat a nonstick skillet over medium heat. Add the diced pork and cook for 4-5 minutes, or until lightly browned. Add the garlic and cook for another minute. Pour in the sauce mixture and simmer for 2 minutes.

Step 5

5. Thicken the filling: In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the pork mixture and cook until the sauce thickens slightly, about 1-2 minutes. Stir in the green onions and remove from heat. Let the filling cool completely.

Step 6

6. Assemble the buns: Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a ball, then flatten it into a circular disk about 10 cm in diameter. Place 1-2 tablespoons of the filling in the center of each disk. Carefully gather the edges of the dough around the filling and twist to seal the bun. Place each bun, seam-side down, on a square of parchment paper.

Step 7

7. Steam the buns: Arrange the buns in a steamer, leaving space between them for expansion. Cover with a lid. Steam over boiling water for 10-12 minutes, or until the buns are puffed and cooked through.

Step 8

8. Serve: Remove the buns from the steamer and let them cool slightly before serving. Enjoy your low-fat steamed pork buns warm!
