Ingredients

  • 300 grams All-purpose flour
  • 2 teaspoons Instant yeast
  • 1 teaspoon Baking powder
  • 2 tablespoons Granulated sugar
  • 0.5 teaspoon Salt
  • 150 milliliters Warm water
  • 2 tablespoons Low-fat milk
  • 200 grams Low-fat ground pork
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Hoisin sauce
  • 2 cloves Minced garlic
  • 1 teaspoon Grated ginger
  • 1 teaspoon Sesame oil
  • 2 tablespoons Chopped green onions
  • 1 teaspoon Cornstarch
  • 1 tablespoon Water (for cornstarch slurry)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, instant yeast, baking powder, granulated sugar, and salt.

Step 2

Gradually pour in the warm water and low-fat milk, mixing with a spoon or your hands until a soft dough forms.

Step 3

Knead the dough on a lightly floured surface for 8-10 minutes, until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm spot for 60 minutes or until it doubles in size.

Step 5

While the dough is rising, prepare the pork filling. Heat a non-stick skillet over medium heat and add the sesame oil.

Step 6

Sauté the minced garlic and grated ginger until fragrant, about 1 minute.

Step 7

Add the low-fat ground pork and cook until no longer pink, breaking it apart with a wooden spoon.

Step 8

Stir in the low-sodium soy sauce, hoisin sauce, and green onions. Mix well.

Step 9

Make a cornstarch slurry by combining the cornstarch and 1 tablespoon of water in a small bowl, then add it to the pork mixture. Cook until the filling thickens slightly. Remove from heat and let it cool.

Step 10

Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a ball, then flatten into a circle about 4 inches in diameter.

Step 11

Place a tablespoon of the pork filling in the center of each dough circle and carefully fold the edges over the filling, pinching to seal the bun. Make sure the seams are secure.

Step 12

Place the buns seam-side down on parchment paper squares and let them rest for 15 minutes.

Step 13

Prepare a steamer by bringing water to a boil. Place the buns in the steamer basket, making sure they do not touch each other.

Step 14

Steam the buns over medium heat for 10-12 minutes, until puffed and cooked through.

Step 15

Remove from the steamer and serve warm. Enjoy your low-fat steamed bao buns!
