Ingredients

  • 200 g Lean sirloin steak
  • 1 tsp Chili powder
  • 1 tsp Garlic powder
  • 0.5 tsp Ground cumin
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper
  • 1 spray Olive oil spray
  • 100 g Reduced-fat shredded cheddar cheese
  • 4 small (8-inch) Whole-wheat tortillas
  • 1 medium, thinly sliced Red bell pepper
  • 1 small, thinly sliced Onion
  • 2 tbsp, chopped Fresh cilantro
  • 0.5 cup Non-fat Greek yogurt (optional, for serving)
  • 0.5 cup Salsa (optional, for serving)

Directions

Step 1

1. Preheat a skillet or grill pan over medium-high heat.

Step 2

2. Pat the sirloin steak dry and season it with chili powder, garlic powder, ground cumin, salt, and black pepper on both sides.

3. Lightly spray the skillet with olive oil. Add the steak to the hot skillet and cook for 3-4 minutes per side, or until it reaches your desired level of doneness. Remove the steak from the skillet and let it rest for 5 minutes before thinly slicing it against the grain.

4. While the steak rests, add the sliced red bell pepper and onion to the same skillet. Cook for 4-5 minutes, stirring occasionally, until softened and slightly caramelized. Remove from the skillet and set aside.

8. Remove the quesadillas from the skillet and let them cool slightly. Cut each into wedges and serve with optional non-fat Greek yogurt and salsa on the side.
