Ingredients

  • 4 pieces (about 4 ounces each) Beef tenderloin medallions (lean cut, trimmed of visible fat)
  • 2 tablespoons Low-fat Greek yogurt (plain, unsweetened)
  • 1 tablespoon Unsalted butter (light, reduced-fat)
  • 2 cloves Garlic (finely minced)
  • 1 tablespoon Fresh parsley (chopped)
  • 1 tablespoon Fresh chives (chopped)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Olive oil (extra virgin)
  • 1 teaspoon Lemon juice (freshly squeezed)

Directions

Step 1

In a small bowl, combine the low-fat Greek yogurt, light butter (softened to room temperature), minced garlic, parsley, and chives. Mix well to form the garlic herb butter. Set aside.

Step 2

Season the steak medallions on both sides with salt and black pepper. Allow them to sit at room temperature for 10 minutes.

Step 3

Heat a large nonstick skillet or grill pan over medium-high heat. Add the olive oil and swirl to coat the surface.

Step 4

Sear the steak medallions for 3-4 minutes per side, or until they reach your desired level of doneness (125°F for medium-rare, 135°F for medium, or 145°F for medium-well). Remove the medallions from the pan and let them rest for 5 minutes.

Step 5

While the steak rests, stir the lemon juice into the garlic herb butter for a touch of brightness.

Step 6

To plate, spoon a dollop of the garlic herb butter over each steak medallion, allowing it to melt slightly. Serve with your choice of vegetables or a side salad for a balanced meal.
