Ingredients

  • 1 cup Brown rice
  • 2 cups Water
  • 4 cups Fresh spinach
  • 1 medium Onion
  • 2 cloves Garlic clove
  • 1 teaspoon Olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Ground black pepper
  • 0.5 teaspoon Salt

Directions

Step 1

Rinse the brown rice under cold water to remove excess starch.

Step 2

Add the rice and water to a medium-sized pot. Bring it to a boil over medium heat, reduce the heat to low, cover, and let it simmer for 25-30 minutes until the rice is cooked and water is absorbed. Set aside.

Step 3

While the rice is cooking, finely chop the onion and garlic. Roughly chop the fresh spinach into bite-sized pieces.

Step 4

In a large, non-stick skillet, heat 1 teaspoon of olive oil over medium heat.

Add the chopped onion and garlic to the skillet. Sauté for 2-3 minutes until softened and translucent.
