Ingredients

  • 2 sheets Reduced-fat puff pastry sheets
  • 4 cups Fresh spinach
  • 1 cup Reduced-fat feta cheese
  • 2 tablespoons Plain nonfat Greek yogurt
  • 2 cloves Garlic
  • 1 teaspoon Olive oil
  • 1 whole Egg white
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large pan, heat the olive oil over medium heat. Mince the garlic and sauté it for 1-2 minutes until fragrant.

Step 3

Add the fresh spinach to the pan and cook for 3-4 minutes, stirring frequently, until wilted. Remove from heat and let it cool slightly.

Once the spinach has cooled, squeeze out any excess liquid and chop it finely.

In a medium bowl, combine the chopped spinach, reduced-fat feta cheese, and plain nonfat Greek yogurt. Add salt and black pepper, and mix well to form the filling.
