Ingredients

  • 4 cups Fresh broccoli florets
  • 4 cups Fresh spinach leaves
  • 1 cup Low-fat cottage cheese
  • 1 cup Plain Greek yogurt (non-fat)
  • 1 cup Low-fat shredded cheddar cheese
  • 3 Egg whites
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Panko breadcrumbs
  • 1 spray Olive oil spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with olive oil spray and set aside.

Step 2

Bring a large pot of water to a boil. Blanch the broccoli florets in the boiling water for 2-3 minutes, or until they are bright green and slightly tender. Drain and set aside.
