  • 1 sheet (approximately 8 oz) Reduced-fat puff pastry
  • 4 cups (loosely packed) Fresh spinach
  • 1 cup (crumbled) Reduced-fat feta cheese
  • 1 large Egg white
  • 1 as needed (for sautéing) Olive oil spray
  • 2 minced Garlic cloves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Thaw the reduced-fat puff pastry sheet according to package instructions, ensuring it’s pliable but still cold.

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 3

Heat a large skillet over medium heat and lightly spray with olive oil. Add minced garlic and sauté for 30 seconds until fragrant.

Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted. Remove from heat and let it cool slightly.
