Ingredients

  • 14 oz Extra-firm tofu
  • 4 cups Vegetable broth
  • 2 tbsp Low-sodium soy sauce
  • 3 Garlic cloves, minced
  • 1 tbsp Ginger, minced
  • 1 tbsp Red chili paste
  • 1 large Carrot, thinly sliced
  • 1 medium Zucchini, chopped
  • 2 cups Baby spinach
  • 3 Scallions, sliced thinly
  • 1 tsp Sesame oil
  • 2 tsp Cornstarch
  • 2 tbsp Water

Directions

Step 1

Press the tofu to remove excess moisture by placing it between paper towels and setting a heavy object on top for 10-15 minutes. Then cut it into 1-inch cubes.

In a large pot or saucepan, heat the sesame oil over medium heat. Add minced garlic and ginger, and cook for 1-2 minutes until fragrant.
