Ingredients

  • 450 grams boneless, skinless chicken breast
  • 1 tablespoon cornstarch
  • 3 tablespoons low-sodium soy sauce
  • 1.5 tablespoons sriracha sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 1 carrot, thinly sliced
  • 2 green onions, sliced
  • 2 cups cooked brown rice (optional, for serving)
  • 2 tablespoons water
  • 1 as needed cooking spray

Directions

Step 1

Cut the chicken breast into thin strips and place them in a bowl. Add 1 tablespoon of cornstarch and 1 tablespoon of soy sauce. Toss to coat and set aside to marinate for 10 minutes.

In a small bowl, combine the remaining 2 tablespoons of soy sauce, sriracha sauce, rice vinegar, honey, sesame oil, and 2 tablespoons of water to create the stir-fry sauce. Mix well and set aside.
