Ingredients

  • 200 grams Low-fat ramen noodles (or soba noodles for an even lighter option)
  • 2 tablespoons Gochugaru (Korean red chili flakes)
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Honey (or a sugar-free alternative)
  • 1 tablespoon Gochujang (Korean chili paste, low-fat version if available)
  • 3 cloves Garlic, minced
  • 1 teaspoon Sesame oil
  • 1 teaspoon Rice vinegar
  • 2 Scallions, chopped
  • 1 teaspoon Sesame seeds
  • 100 milliliters Water
  • 1 cup Spinach or bok choy (optional, for additional vegetables)

Directions

Step 1

Start by cooking the low-fat ramen noodles or soba noodles according to the package instructions. Once cooked, drain and set aside.

Step 2

In a small bowl, mix gochugaru, soy sauce, honey (or sugar-free alternative), gochujang, minced garlic, sesame oil, and rice vinegar. Stir well to create the sauce base.

Step 3

Heat 100 milliliters of water in a non-stick pan over medium heat. Add the prepared sauce mixture and stir well to combine. Let it simmer gently for 2-3 minutes.

Step 4

If you're adding spinach or bok choy, toss them into the pan with the sauce and cook for 1-2 minutes until slightly wilted.

Step 5

Add the cooked noodles to the pan and toss them in the sauce until fully coated. Cook for another 2-3 minutes to allow the noodles to absorb the flavors.

Step 6

Serve the noodles in bowls and garnish with chopped scallions and sesame seeds on top.

Step 7

Enjoy your low-fat spicy buldak noodles hot!
