  • 2 large Celery stalks, sliced
  • 1 large Red bell pepper, diced
  • 3 medium Potatoes, peeled and cubed
  • 400 grams Canned diced tomatoes
  • 4 cups Low-sodium beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Add the lean beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove the beef and set aside.
