Ingredients

  • 2 tbsp tomato paste
  • 1 cup low-sodium chicken or beef broth
  • 1 tsp Italian seasoning
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (optional for garnish)
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Fill a large pot with water and bring to a boil. Add a pinch of salt, and cook the spaghetti according to the package instructions until al dente. Drain and set aside.

In a large skillet or saucepan, heat 1 tablespoon of olive oil over medium heat.

Add the finely diced onion and minced garlic to the skillet. Sauté for 2-3 minutes, until the onion becomes soft and translucent.

Stir in the diced carrot and cook for another 2-3 minutes, until slightly softened.
