Ingredients

  • 8 ounces whole wheat spaghetti
  • 1.5 cups low-fat milk
  • 1 cup low-fat cheddar cheese
  • 2 tablespoons Parmesan cheese, grated
  • 1 tablespoon all-purpose flour
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the whole wheat spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the spaghetti and set it aside.

Step 2

In a medium saucepan over medium heat, melt the unsalted butter. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Whisk in the all-purpose flour and cook for 1–2 minutes, stirring constantly, to create a smooth roux.

Step 4

Slowly pour in the low-fat milk while whisking to prevent lumps. Cook the mixture over medium heat for 4–5 minutes, stirring frequently, until it thickens slightly.

Step 5

Reduce the heat to low and stir in the low-fat cheddar cheese and Parmesan cheese until melted and smooth. Add salt and black pepper to taste.

Step 6

If the sauce is too thick, stir in a small amount of the reserved pasta water, 1 tablespoon at a time, until the desired consistency is achieved.

Step 7

Add the cooked spaghetti to the saucepan with the cheese sauce and toss to coat the noodles evenly.

Step 8

Serve immediately, garnished with freshly chopped parsley for a pop of color and flavor.
