  • 6 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1 cup canned black beans (reduced sodium, rinsed and drained)
  • 1 cup frozen corn (thawed)
  • 1 medium red bell pepper
  • 1 medium avocado
  • 0.5 cup Greek yogurt (non-fat, plain)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 teaspoon honey
  • 2 tablespoons cilantro (chopped)

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

In a small bowl, mix together the olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper.
