Ingredients

  • 1.5 cups Canned navy beans (drained and rinsed)
  • 0.75 cup Low-fat evaporated milk
  • 3 large Egg whites
  • 0.5 cup Granulated sugar
  • 2 tablespoons Honey
  • 2 tablespoons Whole wheat flour
  • 0.25 cup Unsweetened applesauce
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cloves
  • 2 teaspoons Vanilla extract
  • 1 9-inch Low-fat premade pie crust

Directions

Step 1

Preheat your oven to 350°F (175°C). Place the pie crust into a 9-inch pie pan if it's not already in one, and set aside.

Step 2

In a blender or food processor, combine the navy beans, low-fat evaporated milk, and egg whites. Blend until smooth and creamy, about 1-2 minutes.

Step 3

Add the granulated sugar, honey, whole wheat flour, unsweetened applesauce, ground cinnamon, ground nutmeg, ground cloves, and vanilla extract to the blender. Blend again until fully incorporated and smooth.

Step 4

Pour the bean mixture into the prepared pie crust. Smooth the top with a spatula if needed.

Step 5

Place the pie on the center rack of your preheated oven. Bake for 45-50 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.

Step 6

Remove the pie from the oven and let it cool at room temperature for about 1 hour. Once cooled, refrigerate for at least 2 hours to allow the filling to firm up properly.

Step 7

Serve chilled or at room temperature. Slice into 8 even portions and enjoy your low-fat Southern Bean Pie!
