Ingredients

  • 2 cups All-purpose flour
  • 1 cup Whole wheat flour
  • 1 packet (7g) Active dry yeast
  • 1.25 cups Warm water
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 0.333 cup Baking soda
  • 1 whole Egg white
  • 1 as needed Cooking spray
  • 1 as needed Coarse sea salt

Directions

Step 1

In a large mixing bowl, combine the warm water and sugar, then sprinkle the active dry yeast on top. Let this sit for about 5 minutes, until it becomes foamy.

Step 2

Add the all-purpose flour, whole wheat flour, and salt to the yeast mixture. Mix until a dough begins to form.

Step 3

Knead the dough on a lightly floured surface for about 5-7 minutes, until it’s smooth and elastic. You can also use a stand mixer fitted with a dough hook for this step.

Step 4

Place the dough in a lightly greased bowl, cover it with a clean towel, and let it rise in a warm area for about 60 minutes or until it has doubled in size.

Step 5

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper, and lightly coat it with cooking spray.

Step 6

Bring a large pot of water to a boil. Once boiling, add the baking soda carefully (it will fizz up rapidly).

Step 7

Divide the risen dough into 4 equal parts. Roll each piece into a long rope, about 1 inch in diameter. Cut each rope into bite-sized pieces.

Step 8

Using a slotted spoon, drop a few dough pieces at a time into the boiling water-baking soda mixture. Let them boil for about 30 seconds, then remove and transfer to the prepared baking sheet.

Step 9

Beat the egg white and lightly brush it over each pretzel bite. Sprinkle with coarse sea salt to taste.

Step 10

Bake in the preheated oven for 10-12 minutes, or until the pretzel bites are golden brown.

Step 11

Allow the pretzel bites to cool slightly before serving. Enjoy them warm!
