Ingredients

  • 2 medium-sized aubergines (eggplants)
  • 1 teaspoon olive oil
  • 2 large garlic cloves
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Prick the aubergines several times with a fork to help release steam while cooking.

Step 3

Place the aubergines on a baking sheet and roast in the preheated oven for 35-40 minutes, or until the skin is charred and the flesh is very soft.

Step 4

In the meantime, peel and mince the garlic. Set it aside for later use.

Step 5

Once the aubergines are roasted, remove them from the oven and let them cool slightly. This makes them easier to handle.

Cut the aubergines in half and scoop out the flesh using a spoon. Discard the skins.

In a food processor or blender, combine the roasted aubergine flesh, garlic, olive oil, lemon juice, ground cumin, smoked paprika, salt, and black pepper.
