Ingredients

  • 400 grams mushrooms
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic
  • 1 teaspoon fresh ginger
  • 2 stalks green onions
  • 1 teaspoon sesame oil
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Clean and slice the mushrooms into even slices, about 1/4 inch thick.

Step 2

Finely mince the garlic cloves and grate the ginger.

Step 3

Slice the green onions diagonally into 1-inch pieces.

Step 4

In a small bowl, mix the cornstarch with the water until smooth, and set aside.

Step 5

Heat a large non-stick skillet over medium-high heat and add the sesame oil.

Step 6

Once the oil is hot, add the garlic and ginger and sauté for about 30 seconds, until aromatic.

Step 7

Add the sliced mushrooms to the skillet and stir-fry for 5-6 minutes, or until they have released their moisture and started to brown.

Step 8

Add the low-sodium soy sauce, black pepper, and red pepper flakes to the mushrooms, stirring well to coat.

Step 9

Pour the cornstarch mixture into the skillet and stir quickly to combine, cooking for an additional 1-2 minutes until the sauce thickens slightly.

Step 10

Add the green onion slices, toss well, stir-frying for another minute, then remove from heat.

Step 11

Serve immediately as a side dish or over rice or noodles as a main course.
