Ingredients

  • 500 grams Potatoes
  • 1 tablespoon Olive oil
  • 2 pieces Garlic cloves, minced
  • 1 medium Red bell pepper, thinly sliced
  • 3 pieces Green onions, chopped
  • 2 tablespoons Soy sauce, low sodium
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Chili flakes (optional)

Directions

Step 1

Begin by washing and peeling 500 grams of potatoes. Slice them into thin rounds, about 1/4 inch thick.

Step 2

In a large non-stick skillet or wok, heat 1 tablespoon of olive oil over medium heat.

Step 3

Add the minced garlic cloves to the pan and sauté for about 30 seconds until fragrant, stirring constantly to avoid burning.

Step 4

Add the sliced potatoes to the skillet. Stir to coat them evenly with the oil and garlic.

Step 5

Allow the potatoes to cook for about 10 minutes, stirring occasionally to ensure even cooking and prevent sticking.

Step 6

Add the thinly sliced red bell pepper to the skillet and continue to stir fry for another 5 minutes or until the potatoes are tender and the peppers are cooked through but still crisp.

Step 7

Stir in the chopped green onions, 2 tablespoons of low sodium soy sauce, 0.5 teaspoon of black pepper, and 0.5 teaspoon of salt. If desired, add 0.25 teaspoon of chili flakes for a hint of spice.

Step 8

Continue to stir fry everything together for another 3-5 minutes, allowing the flavors to meld together.

Step 9

Taste and adjust seasoning if needed. Serve hot as a side dish or enjoy it on its own for a light meal.
