Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 tablespoon granulated sugar
  • 2 large egg whites
  • 1 cup nonfat milk
  • 1 teaspoon vanilla extract
  • 0.25 cup unsweetened applesauce
  • 1 as needed cooking spray

Directions

Step 1

In a medium-sized mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and granulated sugar. Whisk together until evenly mixed.

Step 2

In another bowl, beat the egg whites until frothy. Add the nonfat milk, vanilla extract, and unsweetened applesauce, mixing until well combined.

Step 3

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Step 4

Heat a non-stick skillet or griddle over medium heat. Lightly coat with cooking spray.

Step 5

Using a tablespoon or a small ladle, pour about 1 to 2 tablespoons of batter onto the skillet for each silver dollar pancake.

Step 6

Cook until bubbles form on the surface of the pancakes and the edges appear slightly dry, about 1 to 2 minutes. Carefully flip and cook until golden brown on the other side, about 1 more minute.

Step 7

Transfer the cooked pancakes to a plate and repeat with the remaining batter, reapplying cooking spray as needed.

Step 8

Serve warm with a topping of your choice, such as fresh fruit, a small drizzle of syrup, or a sprinkle of powdered sugar.
