Ingredients

  • 300 grams Shrimp, peeled and deveined
  • 200 grams Whole wheat pasta (rotini or penne)
  • 150 grams Cherry tomatoes, halved
  • 1 medium Cucumber, diced
  • 1 medium Red bell pepper, diced
  • 0.5 medium Red onion, finely diced
  • 2 tablespoons Fresh parsley, chopped
  • 100 grams Low-fat plain Greek yogurt
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of lightly salted water to a boil. Cook the whole wheat pasta according to the package instructions until al dente, about 10-12 minutes. Drain and set aside to cool.

Step 2

While the pasta cooks, bring another small pot of water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and set aside to cool.
