Ingredients

  • 2 pounds lean beef or chicken breast
  • 2 medium onions, thinly sliced
  • 1 cup low sodium chicken or beef broth
  • 3 cloves garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 bay leaf
  • 1 tablespoon soy sauce, reduced sodium

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium heat.

Step 2

Add the thinly sliced onions to the pot and cook, stirring frequently, until they become translucent and begin to caramelize, about 10-15 minutes.

Step 3

Remove the onions from the pot and set aside.

Step 4

Add the remaining tablespoon of olive oil to the pot.

Step 5

Season the beef or chicken with salt, pepper, smoked paprika, and cumin.

Add the seasoned meat to the pot, cooking each side for about 5 minutes until browned.

Remove the meat and set aside.
